This is a satisfyingly sweet and crunchy treat you can't feel bad about eating!  Make this large batch to make a quick meal in a pinch.

  • 1 large head of broccoli (or 4-5 small heads of broccoli)
  • 2 carrots
  • 1 apple
  • 1/2 lemon
  • 1 T apple cider vinegar
  • 1-2 T agave or maple syrup
  • salt/pepper
  • 2 dollops non-fat Greek yogurt
  • 1/4-1/3 cup raisins or currants
  • 3 T unsweetened shredded coconut


Chop all of the broccoli florets off of its stem.  Using a grater, shredded the top half of the broccoli stems, carrots, and apple into a large bowl.  Squeeze the lemon juice on top of the apple.  Using an electric food processor, blend the broccoli florets until they are small pieces.  You can also use a knife to chop the broccoli instead.  It's just a little messier.  Add this to the bowl.  Add the remaining ingredients while seasoning to taste and mix together.  Eat as a side or snack.  If you want, add chicken and put it in a wrap for lunch.  Store in the left overs in the fridge.  Enjoy!

I made this last night with my own little tweak since I don't eat dairy! Tastes better the second day. I didn't add the yogurt, vinegar, or salt and pepper. Works well with my starving/vegetable eating actor diet.
