In the mood for a quick chocolate cake? Try this recipe! You end up making a tasty cake that's super healthy compared to anything you'll buy at a store PLUS you wont over indulge and eat way too much by making just this small treat!
I also have to share this thought...I felt super clever making a cake out of pancakes! Genius!!!!

Chocolate-Pancake Cake
Healthy and rich dark chocolate cake!
Serves 2-4
Chocolate Pancake Recipe:
- 5 T spelt flour
- 3 T cocoa
- 1 t baking powder (I used aluminum free)
- 1/2 T cinnamon
- 1/2 t stevia (optional)
- pinch of salt
- 1 egg, beaten
- 1/4 cup almond milk
- 1 t vanilla extract
Mix the dry ingredients together. Blend the wet ingredients together. Then add wet to dry and mix until it looks like pancake batter. On a medium to medium-high heat, make 3 equal sized pancakes by spooning the batter onto the griddle that's been sprayed with a little oil. Allow bubbles to form on top of the pancake before flipping.
After the pancakes are cooked, you can add toppings while they're warm or allow them to cool if you are using cream. Add the toppings between pancakes for extra moisture and flavor to the cake.
Chocolate Sauce:
- 3 T cocoa
- 2 T agave syrup or maple syrup
- 1 T coconut oil
- pinch of salt
Microwave the syrup and coconut oil until heated through (30 seconds) and stir in cocoa to make the sauce. Use right away before the sauce hardens.
I put strawberry jam on the first and second layer. I put a spoonful of sauce on the second layer and drizzled the rest of the sauce on top of the third cake. I garnished with toasted almonds.

Without the sauce, this is simply breakfast! Top with Greek yogurt for protein!
